Crispy diced breakfast potatoes with bell peppers and onion — better than any diner. The air fryer gets them golden all over without steaming like a pan does.
Ingredients
Russet or Yukon gold potatoes
3 mediumdiced into ½-inch cubes
Bell pepper
1diced
Red onion
½diced
Olive oil
2 tbspSmoked paprika
1 tspGarlic powder
½ tspOnion powder

💡Even ½-inch dice — inconsistent sizes mean some are crunchy and some are still raw
💡Don't move for first 9 minutes — let the bottom get golden before shaking
