bone-in or boneless
1 (1-inch thick, 12 oz)
Olive oil
1 tbsp
Salt
kosher salt — generous
1 tsp
Black pepper
freshly cracked
½ tsp
Garlic powder
½ tsp
Butter
for finishing — placed on top after cooking
1 tbsp
Fresh rosemary
optional — for finishing
1 sprig

Chef tips

💡Pat completely dry before seasoning — surface moisture prevents the crust from forming
💡Use a thermometer — 130°F = medium rare, 140°F = medium. Time is a guide, temp is the truth
💡Rest 5 minutes every time — cutting immediately loses all the juices onto the cutting board
