1 (1-inch thick, 12 oz)bone-in or boneless
Olive oil
1 tbspSalt
1 tspkosher salt — generous
Black pepper
½ tspfreshly cracked
Garlic powder
½ tspButter
1 tbspfor finishing — placed on top after cooking
Fresh rosemary
1 sprigoptional — for finishing

💡Pat completely dry before seasoning — surface moisture prevents the crust from forming
💡Use a thermometer — 130°F = medium rare, 140°F = medium. Time is a guide, temp is the truth
💡Rest 5 minutes every time — cutting immediately loses all the juices onto the cutting board
